Venison Stir-Fry

Fuel up with this hearty venison stir fry. The perfect meal after a long, cold winter day.
This classic dish can be served up in moments. Built with strong flavours of tasty venison, sharp zings of ginger and garlic, veggies laced with an amazing umami sauce, piled over a warm bed of white rice. Venison Stir-Fry
WHAT YOU WILL NEED
Venison
Water Chestnuts
Baby Corn
Carrots
Brocoli
Green Onion
Sesame Seeds
Rice
Ginger
Garlic
Soya Sauce
Oyster Sauce
Brown Sugar
Cornstarch
Cooking Oil
Salt and Pepper
Can't get your hands on some venison. Substitute for beef tenderloin.

STEP BY STEP INSTRUCTIONS
Cut venison in chunk size pieces removing any unnecessary fat. Coat the venison with salt, pepper and a sprinkle of cornstarch. Seasoned cornstarch adds an extra barrier of flavour, gives the meat a nice crust and thickens the marinade. Place the meat in a container with brown sugar, soya, and oyster sauce. Grate in ginger and garlic. Allow a few hours of marinating to evolve flavours!

In a sauce pan, combine 1 cup of rice with 2 cups water over high heat. Once boiling reduce to low, cover with a lid and let simmer until water is absorbed. (15 - 20 minutes) Rice will be tender, fluff the rice with a fork.
While the rice is cooking in a separate pan heat oil over high heat, quickly sear venison. Once cooked remove from pan and add the vegetables. Stir frequently, adding additional soya and oyster sauce. When broccoli becomes vibrant and carrots are tender reintroduce the cooked venison. Give the stir fry a good stir until all is well distributed. Then plate over a bed of rice topped with green onions and sesame seeds.
