Kimchi Hotpot

An interactive and social dining experience.


Food has always been the centre of my most cherished memories so when on a camping trip or hiking trail I take extra joy in planning my meals. The experience, comfort, nourishment and community that food unites is one we all enjoy.



Hot pot is a communal Asian cooking method where a simmering pot of broth is placed at the center. Ingredients such as meats, vegetables, and noodles are then added to the pot and cooked at the table.


Ingredients:

  • 4 cups chicken stock

  • 2 cups kimchi, drained and chopped

  • 8 ounces udon noodles

  • 1 small daikon, peeled and sliced

  • 1 large carrot, peeled and sliced

  • 1 small nappa cabbage roughly chopped

  • 8 ounces fried tofu

  • 8 ounces enoki mushrooms, separated into small clusters

  • Optional: sliced green onions, sesame seeds, and chili flakes for garnish



Like many other Asian dishes, hot pot is exstreamly healthy. Firstly, it includes a variety of fresh vegetables and lean meats, providing a balanced mix of nutrients. The ingredients are cooked briefly, preserving their nutritional value. Additionally, the use of a flavorful broth enhances the taste of the ingredients without adding excessive oil or fat.




Instructions:

  1. Prepare the hot pot by placing a large pot on a portable stove at the center of your dining table.

  2. Pour the chicken stock into the pot and bring it to a gentle boil over medium heat.

  3. Add the kimchi to the pot and let it simmer for 5 minutes, allowing the flavors to meld.

  4. Add the daikon, and carrot, to the pot. Let them cook for 5-7 minutes until the vegetables are tender.

  5. Then add the udon noodles, fried tofu, nappa cabbage and enoki mushrooms to the pot.

  6. Taste the broth and adjust the seasoning if necessary.

  7. Serve the hot pot at the table, allowing everyone to customize their bowls. Garnish with sliced green onions, sesame seeds, and chili flakes if desired.
