This Fiddlehead Beet Salad has it all! Hints of sweetness, pops of zing and a good crunch. Pair's perfectly with crispy, saucy, chicken wings. Bring wing night to camp!

F i d d l e h e a d Beet Salad Recipe
Ingredients:
1/2 cup of fiddlehead ferns
1 medium-sized beet
4 cups of spring mix salad greens
4 ounces of goat cheese, crumbled
1/4 cup of pumpkin seeds
1/4 cup of dried yellow cranberries
Raspberry vinaigrette dressing

Instructions:
Prepare the Beets: Wash and peel the beets thoroughly to remove any dirt or debris. Cut into bite size cubes. Place the beets in a pan and cover them with water. Bring the water to a boil and let the beets cook for about 15 minutes, or until they are tender when pierced with a fork.
Sauté the Fiddlehead Ferns: Trim any brown or tough ends from the fiddlehead ferns and rinse thoroughly in cold water. Add a tablespoon of butter to the pan with the beets and incorporate the fiddleheads. Over medium heat sauté for 5-7 minutes, or until they become tender. Season with salt and pepper to taste.

Assemble the Salad: Place the spring mix salad greens in a large salad bowl or on individual plates. Arrange the beets and sautéed fiddlehead ferns on top of the greens. Sprinkle the crumbled goat cheese generously, top with pumpkin seeds, and dried yellow cranberries. Lastly drizzle with a Raspberry Vinaigrette.
Toss and Serve: Gently toss the salad ingredients to ensure they are well combined and coated with the dressing. Serve the Fiddlehead Beet Salad immediately and enjoy!
Note: You can adjust the quantities of the ingredients and dressing based on your preference and the number of servings needs

Crispy, Saucy, Chicken Wings Recipe
Ingredients:
4 lb Chicken wings
2 Cups Oil
1/2 Cup catch and cook original coating mix
Salt & Pepper
2 Tbsps Cajun seasoning
1/4 Cup BBQ sauce
2 Tbsps Hot sauce
3 Tbsps Parmesan cheese
2 Tbsps Garlic powder
1/4 Cup Honey
2 Tbsp Mayonnaise
PRO Tip: Keep fast food hot sauce/mayo packets for an easy pack.

Note: Make these wings gluten free by eliminating the coating mix.
Instructions:
In a large bowl, add the chicken wings season generously with salt, pepper, and the catch and cook coating mix. Ensuring all the wings are evenly coated.
Heat oil over medium high. Begin to place wings in and fry for 8 - 10 minutes or until the wings are cooked through and crispy.
While the wings are frying, prepare the sauces for the two different flavours.
Tangy Cajun BBQ Sauce:
In a small bowl, combine 2 tablespoons of Cajun seasoning and 1/4 cup of BBQ sauce. Mix well to combine.
Creamy Garlic Parmesan Sauce:
In another small bowl, mix together 1/4 cup of grated Parmesan cheese, 1 teaspoon of garlic powder, 2 tablespoons of honey, and 3 tablespoons of mayonnaise until well blended.

Assemble:
Once the wings are cooked, remove them from the oil, lay on a paper-towel lined plate and let them cool for a few minutes to soak up any excess oil.
Divide the wings into two separate batches. Place one batch in a large bowl and pour the Tangy Cajun BBQ sauce over them. Toss the wings in the sauce until they are evenly coated.
In another large bowl, place the second batch of wings and pour the Creamy Garlic Parm sauce over them. Toss the wings until they are coated with sauce.
Serve the wings on a platter, and enjoy your delicious homemade chicken wings.
Note: You can adjust the amount of sauce according to your taste preferences. Feel free to garnish the wings with some chopped fresh parsley or green onions.
