Creamy Chicken Pesto Pasta

@nadineadventures and I chowed down on this filling meal before trekking Kawasitchewan Falls. I knew we were in for the long haul and wanted something high in protein! We included broccoli and cauliflower which was pure perfection laced with the creamy pesto sauce. What makes this a great camping meal is the fact that it can come together all in one pot, needs only a few ingredients and packs a load of flavor. I n g r e d i e n t s:
2 boneless, skinless chicken breasts
Salt and pepper, to taste
2 tablespoons butter
2 tablespoons pesto sauce
4 ounces cream cheese, softened
1 cup pasta (your choice)
Juice and zest of 1 lemon
Fresh basil leaves, for garnish (optional)

Instructions:
Season the chicken breasts with salt and pepper on both sides.
Preheat a cast iron pan over medium-high heat and melt the butter.
Add the chicken breasts to the pan and cook for about 6-8 minutes per side, or until they are cooked through and reach an internal temperature of 165°F (74°C). Remove the chicken from the pan and set aside.
In the same pan, reduce the heat to medium-low and add the pesto sauce. Stir it around the pan for about a minute to release its flavors.
Add the softened cream cheese to the pan and stir until it has melted and combined with the pesto sauce.
Pour in the lemon juice and stir well.
Add the cooked pasta to the pan and toss it together with the chicken and sauce until everything is well coated.
Remove from heat and garnish with fresh basil leaves, if desired.
Serve hot and enjoy your creamy chicken pesto pasta!
Feel free to adjust the seasoning and sauce consistency according to your taste preferences. You can also add some grated Parmesan cheese on top for extra flavor. Enjoy!
