A Guide to Fiddlehead Foraging

This spring witness the magic of the outdoors as the seasons change, plants flourish and luscious greens become ready for harvest. Stay on the look out for curled fronds shooting out the base of Ostrich Ferns. Fiddleheads have a unique flavour and is often compared to asparagus. Let's explore exactly how to find and safely harvest this delicious wild vegetable.




Identify

The first step is to identify the right fern. Not all ferns produce edible fiddleheads, so it is important to know which ones to look for. The most common fern that produce edible fiddlehead is the Ostrich Fern (Matteuccia struthiopteris) This fern is found throughout North America, Europe, and Asia.




Habitat

Once the right fern has been identified, let's look for the right habitat. Fiddleheads typically emerge in the early spring, so be sure to start your search in May. Check in damp, shady areas such as riverbanks, wetlands, and forests. Look for areas with moist soil, and where the sun just peaks through the trees.


Harvesting

The fun part! Finally found some fiddleheads and are ready to harvest. When harvesting any wildlife do so in a sustainable and safe manner. Only harvest fiddleheads that are between 2 and 4 inches in length, as larger fiddleheads may be tough and bitter. Cut the fiddleheads about an inch below the coil, and be sure to leave at least half of the fronds on the plant. This ensures that the plant will continue to grow and produce fiddleheads in the future.



Preparing

Once harvested, it is important to clean them thoroughly before cooking. Peel away any of the paper brown husk that still may be attached. Rinse them thoroughly under cold water, removing any dirt or bugs. Fiddleheads should always be cooked before eating, to avoid an upset stomach if consumed raw. There are many ways to cook fiddleheads, but popular methods include steaming, boiling, frying or grilling them.
